Get ready to be blown away with Hanoi egg coffee, ca phe trung. To all the people who love decadent coffee drinks, Ca Phe Trung is a new one to add to your list of favorites. My mom introduced me to ca phe trung at Cafe Nep located in Fountain Valley, California. I need to go back! The egg topping doesn't taste eggy but like custard on top of the coffee. This drink can be made sweet or cold and enjoyed at all times of the year!
What is Hanoi Egg Coffee (ca phe trung)?
Cà phê (kah-fe) means coffee and trứng (troong) means egg in Vietnamese. Hanoi egg coffee is a combination of Vietnamese coffee and raw whipped eggs. This exceptional coffee has a complex flavor profile that is anything but basic. It all started in 1946 during the Indochina War. Nguyen Van Giang a former bartender at Sofitel Legend Metropole Hanoi Hotel left his bartending job and opened his own coffee shop. During wartime Vietnam, there was a shortage of condensed milk. Left with no other alternative and no date on when the milk supply would resume Mr. Giang turned this creativity on and made his alternative. He started whipping egg yolks as a replacement for milk. This clever adjustment would give the Vietnamese local a new delicious, addicting coffee and forever change his fate. Many years later his cafe trung would spread across the globe and the creation would become a legend. Mr. Nguyen Van Giang is now known as the creator of ca phe trung, Vietnamese egg coffee. Cafe Giang still uses their original recipe from 70 years ago. Their recipe uses these ingredients: Vietnamese Robusta coffee, raw chicken egg yolk, condensed milk, butter, and cow cheese. Today his coffee shop still stands and is packed with locals and international tourists. His coffee shop is located at 39 P. Nguyễn Hữu Huân, Lý Thái Tổ, Hoàn Kiếm, Hà Nội, Vietnam. Go try it in Hanoi's Old Quarter!

- Electric egg beater - I highly recommend using an egg beater or an electric whisk!
🛒Recipe Ingredients
What do you need to make this show-stopping, decadent coffee? Just a few ingredients you might already have!
- eggs - Hanoi egg coffee uses raw chicken egg yolks. You will need to separate the yolks from the egg whites. We will be using raw eggs in this recipe. You have the option to use the egg whites for later in desserts or use them for breakfast.
- condensed milk - Condensed milk is used to whip up the egg yolks and sweeten them up. I also add a bit at the bottom of the cup to sweeten the coffee. If you don't have any condensed milk on hand then you can omit this and increase the amount of sugar.
- heavy whipping cream - Heavy whipping cream helps create a cream and thickens the liquid. Some recipes don't use whipping cream so if you don't want to use whipping cream, don't add it.
- sugar - Sugar is combined with the egg yolks and condensed milk to make the egg whip super sweet. This is to balance out the bitterness of the coffee.
- vanilla - Vanilla takes away the eggy flavor and gives the egg mixture the secret wow factor. If you don't have vanilla that is ok. Try it next time!
- Brewed coffee - I use Cafe du Monde coffee grinds and a Phin filter. Alternatively, you can also use instant espresso coffee or your favorite coffee grind.

↔Substitutions & Variations
- Different garnishes to use are cocoa powder, cinnamon powder, and nutmeg.
- Drink this hot or cold, just add ice to the coffee.
- If you want you can add liquor or beer to the eggs.
👩🏫 How to Make Hanoi Egg Coffee (ca phe trung)
Step 1: Crack up the eggs. Separate the egg whites from the egg yolks. There's a tool to help separate the yolks and egg whites, if you have trouble doing this consider using an egg separator.
Step 2: To a bowl or deep blending cup combine eggs, condensed milk, heavy whipping cream, sugar, and vanilla.
Step 3: Using a whisk blend the ingredients until it is nice and thick. This step can take 4-8 minutes.
Step 4: Time to assemble your coffee cup. Fill your cup with brewed coffee.
Step 5: Pour the eggs over the coffee.
Step 6: Optionally add garnish. I sprinkled cocoa powder over mine! Then enjoy!
Expert Tips
- Best consumed immediately.
- Use a hand mixer to whip up the eggs.
- Mix until the egg mixture is creamy and thick. If your mixture is not thick it might be done mixing. You can do a test by filling a cup with water. Then add some of the cream over the water. If the cream mixture floats then you're done mixing. If it doesn't float keep whisking it!
- For aesthetics, pour whipped eggs over a spoon over the coffee.

In general Vietnamese egg coffee will have whipped egg yolks, on top of the coffee. Everyone makes their egg coffee differently but this recipe has whipped egg yolks, Arabic brewed coffee, heavy whipping cream, granulated sugar, vanilla, and condensed milk.

Easy Hanoi Egg Coffee (ca phe trung)
Equipment
- 1 electric egg beater
Ingredients
- 2 whole eggs (separate egg yolks)
- 1 tablespoon heavy whipping cream
- 2 teaspoons condensed milk
- 1 teaspoon vanilla extract
- 1 teaspoon white sugar
- ¾ cup brewed coffee
Instructions
- Separate egg yolks from egg whites. We will be using the egg yolks only.
- Add yolks, heavy whipping cream, condensed milk, vanilla extract, and sugar to a bowl or deep cup. Hold bowl or cup tightly and with one hand and with the other hand whip everything together. Depending on your whisk it will take about 4-8 minutes for the mixture to turn into a soft yellow, creamy consistency. Stop when it's thick texture.
- To a coffee mug add coffee, and ice if desired and then drizzle whipped egg cream over the top.
