Vietnamese artichoke tea, known as trà atiso, is welcomed by many Vietnamese people, especially moms, and aunties. Artichoke is said to have many health benefits, but my mom told me that this tea possesses the power to give you amazing skin. I believe that is the main reason it's so popular. Truth be told, I was forced to drink this when I was a teenager. Now, as an adult, I'm drinking it to cool down. Trà atiso is in the same class of herbal drinks, known as nước sâm. Nước sâm or nước mắt is a Vietnamese herbal drink that cools you down. It's like drinking lemonade or Michelada when it's hot outside, but of instead of sweet lemons or tomatoes we cool down with different vegetables and herbs. When I am at work and need something to cool me off or take the edge off, I like to order boba tea for my coworkers, and if they have an artichoke tea option, it's my go-to! Artichoke tea made from real artichokes is hard to find. Artichokes are expensive, so the teas are usually made with tea bags and they taste super diluted and overly sweet. This recipe is too easy not to share. It is also cost-effective for those who love to drink loads of artichoke tea. It's super simple anyone can make this! All it takes is time to brew the artichokes into a tea.

- Artichoke - use fresh artichoke! Artichokes do wilt fast so remember to use them as soon as you can.
- Water - You'll need to boil the artichoke. Use enough to cover the artichokes.
- Sugar - Sugar is optional if you want to enhance the flavor of the tea and counterbalance any bitterness. You can use any sweetener you like but these are popular sweeteners to add: rock sugar, palm sugar, cane sugar, or honey. Pro-tip if you decide to add honey add it to the tea after it's done cooking. Honey tends to clump up when heated and won't evenly distribute throughout the tea.

👩🏫 How to Make Artichoke Tea, Trà Atiso
Step 1: Wash and clean your artichokes, and cut off the stem/stalk. One of the stems above turned orange in color, indicating it's starting to rot. I cut it off, and the remaining part is pale green and white, still fresh and usable. Be sure to ensure the freshness of your artichokes before using them.
Step 2: To make artichoke tea, add water and the artichokes to a pot and set the heat to high. As the water starts to boil, the artichokes will change color from bright light green to dark brown. It is important to rotate the artichokes so that they are cooked evenly.
Step 3: Once the water starts to boil, cover the pot with a lid and reduce the heat to medium-low.
Step 4: The longer you boil the artichokes, the darker the tea will get. When the artichokes become soft and a brownish green the tea is done cooking. Turn off the heat. Pour yourself a cup of hot tea or let it cool and drink it over a glass of ice.
Step 5: Optionally add your favorite sweetener!

Vietnamese Artichoke Tea (Trà Atiso)
Equipment
- 1 deep pot
Ingredients
- 1-2 whole artichoke
- 4 quarts water
- 1 cup sugar (optional)
Instructions
- Wash and clean your artichokes., and cut off the stem/stalk. Look for any parts of the plant that is turning brown, orange or any shade but green. Trim away and cut it off the artichoke. Artichokes also have spines use scissors to cut it off so prevent any injury.
- Add water and artichoke to pot of water and turn the heat onto high. As the water starts to boil the artichokes will cook. The green leaves will turn a greenish brown. Rotate the artichokes so it cooks evenly.
- When the water starts to have rolling boil, reduce the heat to medium low. Let the water cook the artichoke until the artichokes are soft and brownish green. This should take 45 - 60 minutes. The longer it cooks the darker the tea will be. When the water is a reddish brown color.
- Take the tea off the heat, enjoy hot or over ice. Optionally your choice of sweetner.
